WALNUTS. How has the foodie community completely ignored these wonderful nuts. Sure, we use them for baking and such, but man- have we ever thought about in a SALAD?! What???? Don’t think I’m crazy when I say that, because once you try this, you will be asking yourself the same thing.
I’ve been on a nut kick recently, so it’s no surprise that I decided to give this combo a try. Well, it’s safe to say I’VE GONE NUTS. Gosh, I hate myself for using that combo. Lets move on.
Walnuts are one of the best nuts for you, as they contain essential fats and help fuel your brain. They may be higher in calorie than say almonds, but with all the nutrients they provide, the saying nutrients > calories has never been more accurate. With the combination of sweet potatoes, which add vitamin A and B, plus they contain iron. I know as someone who sometimes struggles from an iron deficiency that eating sweet potatoes really helps meet my requirement (but let’s be honest- eating potatoes has never been an issue for me).
INGREDIENTS (Serves four):
1 large sweet potato, roasted
1/2 cup walnuts
Four large carrots, eighth-ed
6 cups kale, de-steamed
One bell pepper, chopped
One pint grape tomatoes, halved
1 avocado, cubed
3 tsp melted coconut oil, seperated
1.) Cut your sweet potatoes into small cubes. Rub your sweet potatoes with one tsp coconut oil and seasonings of choice. Place them on a baking sheet.
2.) In another bowl, combine the kale and carrots. Then, toss them with one tsp coconut oil. Seperate the carrots and the kale, and place the carrots on the same baking sheet as the potatoes. Keep the kale in the bowl.
3.) Bake the veggies and potatoes at 450, tossing 1/2 way through. While waiting, assemble the rest of the salad.
4.) Once twenty minutes has gone by, make room for the kale on the baking sheet. Cook for an additional 5-10 minutes, or until crispy.
5.) Once done, remove from the oven and let cool. Once they have cooled, toss with the rest of the salad and enjoy!
