I never understood the hype of overnight oats. I admit, I prefer hot oatmeal, but these are still tasty and perfect for quick mornings. I started making these for mornings where I have early tennis, my mom lets me drive to school (I still have my permit, not license), or I’m just being lazy, if we’re being honest haha. I usually make these the night before so they’re all ready in the morning.
Ingredients (Serves one):
1/2 cup oatmeal
1/2 cup almond milk/liquid of choice
1 Banana (Optional)
Toppings of choice
In an air-tight container (I use a mason jar), add oatmeal and liquid. Sprinkle in some cinnamon if you like, and mix well. Close container (make sure it’s air tight) and store in fridge over night. In the morning, I grab the banana (this step is optional, but I highly recommend it!) and mash about 1/2 of it into the oatmeal, leaving the other 1/2 for topping. Mix mashed banana into there, then add toppings of choice. If you’d like, you can transfer the oatmeal to a bowl then add the banana and toppings. However, most mornings I have to eat it straight out of the jar, so I use mashed it in the jar. I usually add a TON of fruit and some greek yogurt, flax seeds, etc for toppings.
