As a child, I was always the kid that wanted more of a dessert but knew I couldn’t eat more because well… my mom wouldn’t let me. I’ve been a fan of single serving type desserts for a while, as I don’t have my left overs clogging up our family fridge. Also, they’re perfect for when you’re craving a treat but don’t want to make a huge batch of something!
If we’re being honest, you can eat this for breakfast (at least, that’s what I’ve done before). While this isn’t like pie, it is like a cake- moist and tasty. However, it’s… HEALTHY. I know you think I’m crazy that this can taste good and be healthy, but I promise you, it is. This makes the perfect single serving cake for Sunday night dessert… or Sunday morning breakfast 😉 This recipe is vegan and delicious.
INGREDIENTS (Serves one):
1/2 cup gluten free flour
1/2 an apple, chopped
1/4 cup apple sauce
1/3-1/2 cup almond milk (or milk of choice)
1 tsp baking soda
1/2 tsp vanilla extract
Dash of cinnamon
Dash of apple pie spice (or 1/4 tsp nutmeg)
Non-stick cooking spray
Pre-heat your oven to 400 F. Spray an oven safe bowl with non stick spray. Combine all your dry ingredients (this includes spices) + the apple sauce in the sprayed bowl and mix well. Add your liquid and mix more. Once you reach a batter like consistency, add the chopped apple, and mix those in as well. Stick in the oven and sit for 20 minutes. After 20 minutes, turn heat to 450 F and cook for five more minutes or so. Once done, turn oven off and let the cake sit in there for two-three minutes. After the time has passed, using a hot pad, remove from oven and let cool for a few more minutes. Once ready, enjoy!
