As much as I love vegetables, I admit that not all of them are extremely versatile. Let’s take brussel sprouts. They’re great with some balsamic vinegar and a little bit of seasoning, but you can’t exactly add it to oatmeal to give it volume. However, zucchini is completely different. It is an extremely versatile vegetable, and lets be honest, it tastes pretty good!
Recently I’ve been loading up on it in my fridge because it is cheap for a large amount, it keeps well, and like I said- there’s so many uses for it! So, to start a new series called “Six ways to…” we’ll take a look at all the things you can do with zucchini. Prepare to have your mind blown!
I love oatmeal, and could eat endless amounts of it. However, I’d like to save room for other foods through out the day, and I don’t have an endless amount of oatmeal. Shredding up 1/2 a zucchini, dicing it even smaller, and adding it to your oatmeal while it’s cooking adds SOOO much volume. You’ve probably heard this already, but you can’t even taste it! Probably one of my favorite ways to use it. All you need is a sparlizer or vegetti, which you can find at almost every home supply store. I got one for christmas, and was OVER THE MOON about it (almost kinda sad to be honest). One zucchini (as seen below) gives so much volume, and with an added protein, it fills you up! If you can tell, zucchini is a great veggie for volume. With baking, if done right, zucchini bread can be a great healthier alternative to your average baking bread. I am still trying to perfect the perfect zucchini bread recipe, so if you have any ideas, shoot me an email!
When I was younger, scrambled eggs were my everyday breakfast. For about five years straight, I rate two eggs, scrambled, with toast and a smoothie. When I discovered how much I love adding veggies to my scrambles, I knew zucchini would fit perfectly. Give it a shot!
5.) Hash Browns
If you’re dieting down, then this life hack is perfect for you. Instead of using a full potato for hash browns, do 1/2 potato, 1/2 zucchini. Like the zoats, you don’t really taste the zucchini, and you feel like you’re eating just potato. Plus, you’re filling yourself up. It’s a win-win!
I loveeeeee no-oil potato fries, but sometimes, I want a change. That’s where zucchini “fries” come in. It’s like roasting zucchini, but with a bit of bread crumbs and seasoning. Again, still working on the perfect recipe, so let me know if you have any!
