Ugh, so I know I have a lot of bowls on my blog, but I promise you, this may be the best one yet!
When going over recipes to share this week, I had BIG ideas. I’m talking enchiladas, casseroles, and more. BUT, when I sat back and thought about it, I realized that I want to share easy meals you can make when you’re pressed for time. Sure, those all sound great, but in reality, I don’t have two hours to wait for dinner to cook. I want things quick and easy that are also nourishing.
Introducing this smokey sweet potato quinoa bowl! It’s vegan, gluten free, and protein packed. Oh, and it takes less than an hour and requires 7 easy, cheap ingredients. Nothing sounds better than that! In reality, this is what my dinner looks like 99% of the time, especially when I’m in a rush. The concept sounds simple, but the taste is out of this world.
I love adding liquid smoke to things for extra flavor, and since a little goes a long way, it’s a $3 purchase that will last me years. I decided to pair it with the potatoes for a smokey/barbecue taste, and UGH- outta this world. When paired with the avocado, corn, and quinoa- wowza. It’s funny how the simplest meals can be the most flavorful.

- 1 large sweet potato, diced
- 2 tsp liquid smoke
- 1 tbsp olive oil
- ½ tsp sea salt
- 2 cups cooked quinoa
- 1 cup corn kernels
- 1 avocado, sliced
- Microgreens and lime, for garnish
- Heat your oven to 450 F.
- Mix together the diced potatoes, liquid smoke, olive oil, and sea salt. Line on a baking tray and cook for 45 minutes, until tender.
- When ready, divide into two bowls, add the quinoa, corn kernels, avocado, and micro greens. Squeeze lime over and enjoy!
