This spicy black bean pasta salad is vegan, gluten free, protein packed, and full of flavor! Made with common ingredients and incredibly flavorful, this is the perfect summer side dish.
Alright, so classes have started, and let me tell ya- college is a LOT different than high school. One thing that I’m happy about is that I went to a pretty difficult, “college prep” high school, so classes there were meant to prepare us for the work load and expectations of college. While that doesn’t make the transition smooth, it does make it easier.
SO, now that classes have started, that means MELA PREP. This summer was been all about cleaning out the pantry. Everyday, I got more and more packages, and while it’s all great, there was so much food that goes left un touched. I probably got five- maybe 6?- unopened bags of ONE FLAVOR of granola. Not just one brand- a single flavor. I’m blessed everyday for what I do, but it can be overwhelming.
As I was sorting thought some granola the other day, I came upon an unopened box of lentil pasta and thought- hey, maybe I should do a pasta salad for the blog? Okay, well at first I thought of a pasta dish, but since it’s been so hot, pasta salad sounded better.
I also found ten- yes, ten- cans of black beans, so a Mexican pasta salad seemed fitting. There are so many things I love about this spicy black bean pasta salad, like the fact that it’s vegan & gluten free, 7 ingredients (11 including the dressing), & ready in 20 minutes! All you need to do is cook your pasta, drain your beans, chop your vegetables, whisk your dressing, and combine. Boom- good to go.

- 1 box (8z) pasta, cooked
- 1 15 oz can black beans, drained and rinsed
- ½ avocado, cubed
- ½ cup cilantro
- 2 cup corn kernels
- 1 pint cherry tomatoes
- 1 bell pepper, chopped
- ¼ cup olive oil
- 2 tbsp lime juice
- ½ tsp chili powder
- ½ tsp sea salt
- Cook your pasta normally.
- Make the dressing by whisking all the ingredients. Set aside.
- Assemble the pasta salad by combining all the ingredients in a large mixing bowl. Once the pasta has cooked, drain the water and add to the bowl. Pour over the dressing, toss, and enjoy!
