Does anyone else have a childhood memory of going to their local grocery store and getting a sugar loaded muffin with sugar sprinkled on top as well? No? Just me? Oh well! I loved doing that for years, but grew out of my muffin obsessions by 4th grade (Needless to say… I became a donut person.) Well- I’m bringing my muffin obsession back with these!
I baked these completely on a whim, but I’m so glad I did. I make these weekly, as they make for a good pick me up through out the day. The protein per serving is awesome as well considering it’s a muffin, which is a win in my book. Plus- it’s like having dessert, but it’s HEALTHY!!!
I love the combo of strawberries and dark chocolate. You get your chocolate fix and sugar craving out of the way, but you feel satisfied while doing so. Muffins are a staple for me during the fall and winter. There’s something so nice about some healthy muffins and hot coffee on a nice football Sunday. That right there was a terrible hint at the fact that I will be doing lots of muffin recipes, so stay tuned 😉
INGREDIENTS (Makes 12 large brownies):
1/2 cup rolled oats
1/2 cup plain greek yogurt (I used 0%)
1 egg white
1 banana, mashed
1 tsp baking powder
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 cup almond milk (I used unsweetened)
1/4 cup dark chocolate chips (Use 70% or higher for antioxidant benefits)
1/2 cup strawberries, diced
1.) Pre-heat your oven to 400 F on bake. Spray your muffin tins with non stick spray or add muffin cups to the tin and spray the cubs so it does not stick to the muffin.
2.) In a bowl, add your dry ingredients (flour, oats, baking soda, cinnamon) and mix together. Mash your banana on the side, and add that in.
3.) Add your egg, egg white, greek yogurt, extract, and almond milk to the dry + banana mixture. Stir that well.
4.) Add the chocolate chips and diced strawberries, and once again, mix.
5.) Scoop out your mixture into the muffin tins evenly. I did about one giant spoon full and a smaller one afterwards.
6.) Stick in the oven for 20 minutes. Once done, take out and let cool for a few minutes. Then… enjoy!
