These are nachos average nachos (I’m sorry, I had to do that). These are a gift from the heavens. These combine some of my favorite foods- potatoes, avocado, CHEESE, and oh yeah, potatoes. These take twenty minutes to make, and are 300% better for you than the ones at your local taco shop. THESE… are sweet potato nachos.
Lately I’ve been pretty lazy when it comes to my dinners. I blame it on junior year. I come home from tennis, take off my makeup, put on comfy, clean clothing, eat dinner, and do homework. I have minimal time to make something creative, which is why these are perfect. Sweet potatoes are a beloved food of mine, and I can’t go a few days without them. I will never be over how perfect they are roasted with seasonings or baked with almond butter drizzled on. I do not discriminate against how I decorate them, and neither should you.
Let’s add these to the list of repeat dinners. I made them for my family and they LOVED them. I recommend these for a simple dinner that is packed with nutrients and all sorts of goods.
1 small-medium sweet potato, sliced into fry shapes
1/4 tsp chilli powder, cumin, oregano, and paprika
1 tsp oil of choice
1/4 cup cheese of choice
2 tbsp corn and quinoa
1/4 avocado, mashed
1.) In a bowl, combine the seasonings, potato, and oil. Mix very well.
2.) Line a baking sheet with non stick spray and lay your potatoes out. Stick it in an oven that has been pre-heated to 400 F on bake for 30 minutes, or until crispy.
3.) Take out of the oven and plate the potatoes. Add your cheese, corn, avocado, and quinoa. Drizzle with hot sauce if you like spicy and enjoy!
