There ain’t no party like a taco party (insert salsa emoji)
When I was young, I always cared about what was being served at the birthday parties I was invited to. Not gonna lie- after a while, I got very sick of the pizza and cake trend. When I was invited to a birthday party in 2nd grade, they served tacos instead, and I think I tried to become that persons best friend for a solid two months because the tacos were homemade. I still remember how fantastic those bad boys were- crunchy shells, melted cheese, a nice guac/salsa ratio.
Flash forward to now and I still love tacos. I also love zoodles, and my spiralizer. I’ve discussed my spiralizer so much, but I’ll do it again. Mine is about thirty dollars, but I’ve gotten SO MUCH USE out of it. Here is the one I recommend.
The combo of taco and zoodle is a strange one, not gonna lie. I was hesitant because raw zoodles, as delicious as they may be, don’t blend well with Mexican flavors. I was so surprised as to how this turned out, so I had to share. Let’s begin!
INGREDIENTS (Serves one):
1 medium zucchini, spirilized
1/4 small yellow onion, diced
1/8 bell pepper, diced
1/3 block tempeh, cubed
1 corn tortilla, cut up
1/8 tsp black pepper
1/8 tsp chili powder
1 tsp coconut oil
Other topping ideas: avocado, guac, salsa, cheese
1.) Spirilize your zucchini using your spirilizer and set aside in a bowl.
2.) Heat your coconut oil on low in a pan. Chop up your onion and toss in the pan until translucent (about ten minutes). While the onions are cooking up, dice up your bell pepper and tempeh. After the ten minutes, add the tempeh and bell pepper into the pan. Stir around consistently for another ten minutes.
3.) Line a baking sheet with cooking spray. Cut up your tortilla into “chips” and toss with the black pepper and chili powder. Pay out on the sheet and toast them at 450 for six minutes. Once the six minutes are up, remove from oven and set aside.
4.) In the bowl with the zoodles, add your veggies, tempeh, corn chips, and any other toppings of choice. Enjoy!
