Another day, another pancakes recipe. One of my favorite things to do is make new pancake recipes because A- it’s an excuse to make pancakes and B- IT’S AN EXCUSE TO MAKE PANCAKES. Okay, after that mini freak out, let’s get down to business. I haven’t posted a new pancake recipe in a few weeks, and I feel like I owe you guys some. If you couldn’t tell, these pancakes are 100% vegan (ironic that I topped mine with greek yogurt, isn’t it) and 200% delicious. I love making these for dinner because that’s when I find time for them, and they taste delicious even then! Well… there’s never a bad time for pancakes, am I right?!
INGREDIENTS (Serves one):
1/2 cup gluten free flour of choice (I use Bobs Red Mill All Purpose)
2 tbsp coconut flour (not needed, but it makes the pancakes a lot fluffier and adds a ton of volume)
1 banana, mashed
Two flax eggs (two tbsp flaxseed + six tbsp water, mixed together and stuck in the fridge for at least thirty minutes- I usually do mine for all day if I’m making these for dinner or over night if they’re for breakfast)
1/4 cup unsweetened apple sauce* (adds a ton of moisture and makes them better in general but they’re still delicious without it!)almon
1 tsp baking powder
1/2 tsp cinnamon*
1/2 tsp nutmeg*
1 tsp vanilla extract
1/2 cup d milk
Toppings of choice
Non stick spray (for cooking- if you don’t have, sub for one tsp cooking oil)
NOTE: * means it is an optional ingredient
In a large mixing bowl, combine your flour(s), spices, baking powder, and mix together. Add your wet ingredients (apple sauce, almond milk, extract, flax eggs) + the banana to the bowl of dry ingredients and mix well. It should form a thick batter. Once all of it has combined, spray your pan with non stick spray onto the pan, and heat to a low-medium heat. Place about two heaping tbsp of the batter into a circle on the pan, and using a spoon, form a pancake like shape. Wait about two minutes or so, and once you think it’s ready, flip the batter. Once the other side is done, transfer to a plate and repeat these steps! Once the batter is all used up, add your toppings of choice and enjoy!
