12 days. 12 days until endless amounts of Christmas movies, Netflix binges, cooking galore, sleeping in, and more. I admit I’m more than a little done with school, but knowing next Friday I will be free makes it a little better. For now, let’s dig in!
Woke up craving a green smoothie bowl (don’t ask me why), so I took a break from my oats and whipped one up. The exact recipe is coming soon, but it’s the best green smoothie EVVVVAAAAA. Creamy. Filling. Amazing. I topped it with some Purely Elizabeth granola (infinite duh), fresh berries, pistachios (my favorite nut), and hemp hearts.
We have the strangest lunch time as I’ve explained countless times, and I’m usually not very hungry for food by the time it comes. I pack a relatively small lunch with a filling afternoon snack, which I’ve found works well. I’ll admit I’m a creature of habit when it comes to this meal, and I keep it simple since I don’t have much time to prep it.
To start off, I had two slices of bread that I mashed avocado on to (can’t go a day without avocado toast) 😉
Then I munched on some carrots with a ton of hummus added post photo.
Annnndd I forgot to take a photo of it but I had some yogurt on the side.
Afternoon Snack Part One
Like I said, I like a snack that will keep me full until I get home from school. I eat this in-between classes (and I usually sneak it in if I don’t finish). I’m loving these RXBARS, especially the coconut flavor!
Afternoon Snack Part Two
Wasn’t super hungry when I came home since the bar filled me up decently, but I did want something to snack on while I studied. I used to be obsessed (weren’t well all?) with string cheese, and I’m bringing the obsession back (sunglasses emoji would be GREAT here 😉 ). Paired it with some buttered popcorn rice cakes, which give the perfect salty flavor! There aren’t any chemicals in these, but there is a TON of sodium, so beware- they can be addictive.
Tonight I lost track of time from work, so leftovers came to the rescue. I WAS A PSYCHOTIC BEAST. Like I ran into the kitchen and almost ate 1/2 a bag of grapes (no joke- those things are addictive!!). I made what I usually do- a big bowl of stuff (barbecue baked tempeh, balsamic brussels, roasted bell pepper, leftover quinoa, diced tomatoes, feta cheese, arugula, dollop of hummus, and some greek yogurt as a sour cream replacer)- and used Adventures of Huckleberry Finn as it’s placemat 😉
As the ultimate creature of habit, I had the usual- cereal (One Degree Organic Foods brown rice cacao crisps & ancient maze flakes- LOVE this combo) with some frozen fruit & cinnamon.
Carbs are my weakness 😉
