HI HELLO DID YOU SEE ANY CHANGES?! YO GIRL IS SELF HOSTED!!!
Last week, my blog was down while I figured out countless tech issues as I tried to convert over to a self-hosted domain, but I’m proud to say it’s done! (Shoutout to tech support for being there for those 11 PM stress calls). I feel a huge weight off my shoulders, and while there is still a few things to add, it feels so good to say I’m self hosted. I’m so happy with how everything turned out, so I hope you like it! Anyways, onto the eats.
I had an 8:30 AM tennis session, so I needed to fuel up fast. Thankfully, the microwave poached egg / avocado toast combo never fails (even when the yolk is overly poached- it’s still a winna 😉 ). I basically drenched it in hot sauce post photo, but you know I gotta make it Insta worthy first #firstworldprobs.
After tennis, I whipped up some of the BEST OATS EVA. I’m in love with the combo of berries, bananas, and peaches over my egg white oats cooked in Salbachia ground flax, especially with summer coming up. I added Purely Elizabeth granola on top, along with some cacao nibs, Wild Friends Sugar Cookie PB (I will cry when I run out of this flavor) and hemp hearts. I’m that person that even when it’s 100 degrees out, will carve a nice hot bowl of oats. #judgeme #threehashtagsonepostwhoami
Lunch was a recipe tester of some of my homemade sundried tomato kale pesto, which is delicious!! I’ve been adding it to everything recently, so I know you guys are gonna love it. I baked some sweet potato and made a shrimp, roasted veggie bowl out of it. This is a staple meal in my diet, and as I get lazier due to school, the more this meal will appear.
Dinner was too good to be true. That potato you see? GAH. WOWZA. I’ve started to pre-cut my sweet potatoes before I bake them, and not only does it speed up the cooking time, but it tastes AMAZING. It gets super crispy on the top but is still soft and sweet on the inside. Like a cookie if that makes sense, but better. See what I mean about that pesto? I’m adding it to everything!! Also had some tempeh, roasted brussel sprouts, and kale underneath with avocado on the side, but let’s be honest- the potato is the real winner here.
After my mom and I watched Scandal + Grey’s Anatomy (finally caught up!!), I did a bit of reading and ended the night with some Netflix and this Arctic Zero pint. This was my favorite chunky flavor BY FAR, and I’m so sad I finished all the pints 🙁
