Another day, another post about my daily eats. You guys seem to love these, so why not continue them? Today’s is a bit different- I documented this while I was at my family cabin last week. The cabin’s been in our family for over 100 years, and it’s a tradition that we go every year. I love it because it’s a forced break from technology and society, and it has gorgeous hiking trails. Overall, it’s a very relaxing trip that involves lots of reading and relaxing. Consider this a “What I Ate Today” combined with a “Day in My Life” if you will 😉
I woke up around 7:15 to pouring rain. When I say pouring, I mean PORUING. It rained all night and only got worse in the morning, which meant instead of rushing out to go on a hike, my mom and I took it easy. I started off the morning with reading my book, drinking an iced cashew milk latte, and relaxing. The book is called “Dark Horse”, and it’s a political thriller about a fictional election. I’m a big fan of “Scandal”, and this book is very similar. Highly recommend, even if there is no Olivia Pope like character.
Breakfast before our hike was a biiiggggg bowl of microwaved oatmeal topped with berries, hemp hearts, and peanut butter. I didn’t get to make my stove top oats while I was there, so microwave oats will do, but I will say- once you go stovetop, there’s no going back. 3000x fluffier! Oh, and in the oats is chia seeds, egg whites, and cashew milk.
Then my mom and I headed out for our hike. It was our last day at the cabin, so we decided to do one of our favorite trails up to the cell phone towers. Overall, it’s about an eight mile hike at 8000 ft altitude, so it’s quite the workout.
Oh, and it’s great bonding time!
When we got back from the hike, I wasn’t quite hungry for lunch, so I sat outside and worked on my college apps. CAN WE TALK ABOUT THIS VIEW.
Lunch this day was a huge ass salad with roasted brussel sprouts in EVOO, roasted chickpeas, baked tofu, hummus, and ½ an avocado over a bed of romaine. This was my go-to lunch while I was there because it was filling, easy, and overall BOMB.
After lunch, I read more of my book and watch some of the Olympics. We got NBC up there, so we go to catch all the action (thank god). Watching the gymnastics brought back so many memories of pee wee gymnastics at my local gym, and tons of cartwheels and summersalts. Ah, the memories.
During the afternoon, my family and I played some poker and I ate a gigantic apple with peanut butter on the side. Typical.
Dinner part one was a salad with an olive oil dressing that my mom made. Usaully, we have cheese on the salad but we forgot to bring some this time.
And the best part of dinner had to be the burrito bowls I made for everyone. They had brown rice, black beans, corn, chicken, avocado, salsa, cheddar cheese, hot sauce, and romaine. OH MY GOD SO GOOD. I gotta blog this ASAP cause it was BOMB and extremely filling.
After dinner, my mom and I went on a sunset walk to a viewpoint that overlooks the valley. It’s honestly one of the prettiest views in the world, and it’s a very special place for my mom and I. If you are ever craving a trip to the mountains, GO TO MT LEMMON, ARIZONA. Hands down the prettiest place for camping, hiking, and relaxing.
We walked back to our cabin and decided watched the women’s all around gymnastics event. I did some adult coloring, and had a gigantic bowl of cereal with granola, ~2 tbsp peanut butter, puffed kamut, quinoa flakes, ½ a banana, cashew milk, and tons of cinnamon. GIMMIE ALL THE CARBS.
