Currently writing this post while eating a vegan root beer float #winning.
ANYWAYS, onto the eats.
This day’s eat’s started out with the new Instagram obsession- sweet potato bowls! All reds to @shutthekaleup for this one, because it’s too good to be true. In mine I had two small steamed sweet potatoes (try saying that five times fast), plain Siggi’s mixed with cinnamon, Purley Elizabeth granola, almond butter, and nectarine. Oh, and post photo I added tons of almond milk and MORE cinnamon- DUH.
Pre-tennis lunch was stupid easy. I had spent the morning working on some recipes, so lunch was basically some of everything: chia falafels, quinoa tabouleh, romaine, hummus, avocado, sauerkraut, and bell pepper.
Because I was still hungry, I had some energy balls while I drove to my tennis club (recipe coming soon!)
And the post tennis hunger was way too real today. It was 90+ degrees on the court, so I didn’t feel like toast or anything. I had some leftover greek yogurt, and I mixed it with almond butter and cinnamon while I wrote a few blog posts.
Oh, and some salted almonds too, which have been my current obsession!
I went off to babysit some five year olds around 5:00, and didn’t get a chance to eat until 7:30ish. They didn’t have much vegetables at this house, but I made do with what I had. In the bowl was a bag of arugula (I was craving salad, okay), chopped almonds, 1/2 an avocado, zucchini, cucumber, hemp hearts, and more of that quinoa tabouleh that I brought from home. Oh, and some salsa too because I put that ish on EVERYTHING.
And here’s where it get’s interesting. I put the kids to bed around 8:30, and sat on the people’s couch until 11:30, checking emails, editing photos, and all things productive. I wasn’t expecting them to get home so late, and I was craving something sweet before they got home, so I made do with what they had. I had a bowl of cereal with almond butter and frozen berries x2 (no milk- they didn’t have any dairy free milk ;( ).
I finally got to go home around 11:45, and YA GIRL WAS TIRED. I slept in until around 8:45 the next day, which is SO unlike me it’s insane. Anyways, sorry this is short- I got a lot to do today. See you soon!
