Hey, hey hey! How’s it going? Me- I’m great. I’m writing this almost two weeks in advance because frankly, I know I’m going to be swapped with school and do not want to stress about this. Also, I got a three day weekend, and I’ve been super productive so far with both the school and the blog, so I’m feeling gooodddd. Today I’m showing you a day in my life along with the eats, so you know the drill!
I woke up on Sunday and when I remembered it was my rest day, I smiled ear to ear. So, I made my coffee and whipped out my computer to do some work. I love planning out blog ideas during my coffee time and catching up on social media during this time, especially when I don’t have to rush anywhere.
However, about 1/2 way through, my mom came down to my room and told me she had a tennis crisis: one of her players for her Sunday tennis group dropped out, and since it was doubles, they needed an even number or else three other people couldn’t play. I told my mom I’d love to play, so I put on my tennis gear, and made a quick egg and avocado toast to eat on the way to the courts.
I had so much fun playing with my mom- something I hadn’t done in a while- and played well for waking up less than an hour before that 😉
I came home a hungry breast from playing, so I whipped up some oats- at 12:00… I WAS NOT MISSING OUT ON A NICE COZY SUNDAY BREAKFAST OKAY. Regardless of the time, I enjoyed them with ease before I had to work on my term paper for two hours.
When I work on school in general, I have rules: my phone is across the room, charging on do not disturb, and I only get up to grab water or use the bathroom. Other than that, I am working. For my term paper, to ensure I do not over work myself in one day, I have a playlist on spotify that runs exactly two hours, so once a song repeats, it’s a signal to myself to stop working for the day. It works like a charm!
After that, I had a spur of the moment recipe idea, so for lunch, I tested it out. Verdict- a great side dish! I ate the entire thing, even though it technically serves two (hey, I was hungry!!).
Eggplant pizza- looks strange, tastes amazing 😉
After the meeting, it was time for dinner, so I whipped up a staple- sweet potato, veggies, salmon with marinara sauce (so good!!), and avocado. Thanks to meal prep, the only thing I had to do was stick the potato and veggies in the oven- easier than pie! (Okay, maybe a little harder, but still) 😉
After dinner, I simply worked on some blog posts, cleaned my room, and listened to some Bill Simmons Podcasts, which is one of my two favorite podcasts to listen to- the other being Around the NFL 😉 I love setting the mood for blogging, especially at night, and I take pride in my room being way too “trendy wannabe”- I LIKE IT OKAY. DO NOT JUDGE.
The setup 🙂
Dessert was the usual cereal bowl- you know the drill 😉
