Did you guys know it was a leap year??? Okay, wow- that was a strange way to start out a blog post. But, seriously! I feel like this detail is so underrated and as you know, it’s very un common, so let’s appreciate it! And… let’s appreciate the fact that I packed a completely different school lunch (wow, spoiler alert) and am experimenting with my dinners. Thus, this will be a very exciting What I Ate Today 😉
I’ve been trying to switch up my breakfasts, because in all honesty, my oatmeal was getting pretty repetitive on my Instagram feed ( #firstworldfoodbloggerprobs). However, I woke up CRAVING it, and it was the type of craving you just can’t control. Like that craving for pizza after a long week at school… gotta listen to it.
Toped my usual oats (quick oats, ½ almond milk & ½ water, chia seeds, one egg white) topped with Wild Friends Sugar Cookie PB (AKA MY FAVORITE THING SINCE AVOCADO TOAST), coconut shreds, chopped pistachios, & hemp hearts.
Post photo, I added frozen berries, greek yogurt, and water, then microwaved it for two minutes to let everything melt and get allllllll good 😉
Okay, so after getting through part of the day, it was lunchtime. BOY WAS I PUMPED- NEW LUNCH. I’ve been wanting to step up my lunch game, so instead of my avocado toast, I opted for a salad of arugula, quinoa, tempeh, hummus, salsa, and broccoli. It was so filling and a very typical Danielle meal 😉
Also had a peach (I like my peaches tougher… am I the only one?) and a Siggi’s yogurt on the side!
Struggled through the last two periods, and whipped out a sparkling water + some cucumbers with unpictured hummus for a last period snack because me driving hungry isn’t pretty…
Coming home, I realized I had some Lara Bars I had bought the previous week, so I decided to try a new flavor that day! It was the bomb.com in my opinion, and I’ll be trying more flavors very soon.
As for dinner, I got caught up writing a paper (note to self: never try and edit a six page paper twenty minutes before dinner… you will get too wrapped up in it), so I stuck with some classic avocado toast- one with a fried egg, hummus, greek yogurt (sounds strange, but tastes amazing 😉 ) and feta, while one had just smoked salmon and feta. Gah, if y’all have never tried this combo, you gotta get on that hype train like ASAP.
As for dessert, I think we can guess what I had… cereal (One Degree Organics and puffed kamut) mixed with cinnamon and frozen berries. Sidenote- does anyone remember when The Rock was allergic to cinnamon in The Game Plan, and pronounced it funny because his tongue swelled up?! My mom and I quote that EVERYTIME I whip out the cinnamon. I loveeeee ending my day with a nice bowl of cereal because as we all know, I am all about ze carbs 😉
