Yeah, so my spring break wasn’t the most exciting.
My closest friends were all taking the ACT, which happened to the weekend during spring break, so they were locked in their house studying away. As for me, I spent my break focusing on re-learing 400 years of American history for the AP US History test in May. Don’t worry, I also did a lot of blogging, and have some very, very exciting things coming 😉 As for the eats, they were a lot of recipe tests, protein bars, and quick eats I could grab during my five minute study breaks. I spent about four hours a day studying, so let’s hope it’s all worth it! Onto the eats-
I’ve been off my oat game recently, which is something I never thought I’d say. I’m still craving them like crazy, but over break I felt a constant pressure to get to studying, so a lot of my breakfasts looked like this: TOAST.
I ate so many pieces of toast over break, but I’m not complaining 😉 I bought a load of Trader Joe’s Rye Bread during a recent grocery trip, and I’ve discovered that my new favorite combo is avocado toast with a fried egg on rye. Expect this combo a lot, because it’s freaking amazing (and way too underrated).
OKAY, I HAVE NO IDEA WHAT IS GOING ON, BUT I STILL CANNOT FIX THE FLIPPED PHOTOS AND THE FACT THAT SOME ARE FLIPPED AND SOME ARE NOT. I’M SORRY- IT BOTHERS ME PROBABLY MORE THAN IT BOTHERS YOU. UGHH.
I had to run to an appointment, so that was eaten in my car, along with this Calfia Farms Iced Coffee I sweetened with some stevia before I left.
After my appointment, I received a text message from my mom reminding me to not study that day and instead focus on the blog and myself. I posted a very personal post that day, so she knew I needed “me” time (sorry, Andrew Jackson and FDR- you were pushed to the side).
I headed to my local Whole Foods, found a booth, and got blog work done for two hours. I brought along a single serving almond butter pack from Barney Butter, along with a green apple and a Cashew Coffee drink from Juice in the Raw. I was sent some juice samples and even though I’m not a juice person, I am impressed!!
PS- how cute is the decor at my local Whole Foods?!
Naturally, I had to do some grocery shopping when I was done 😉 this Siggi’s flavor is BOMB, and I had a coupon for the PB cups- this “me” day I took turned out pretty well 😉
When I came home, I was craving a smoothie bowl despite it being a rainy day, so I whipped up one of my favorite recipes- the Blueberry Avocado Smoothie Bowl. Coconut butter, homemade pumpkin seed granola, hemp hearts, goji berries, and coconut not optional.
Afterwards I blogged some more via my bed, something I probably shouldn’t do too often but like I said- me day!
And knowing me, I realized I needed to study. Okay, I didn’t “need to”, but my anxiety over not studying was setting in. I did a quick round of flashcards before dinner to calm my nerves. Ah yes, high school.
I also posted this post, which is the most personal I’ve ever gotten on the blog. Thank you so much for all the continued support in response to the post- it means more than you will ever know 🙂
And dinner was a recipe test enjoyed outside with my dogs- it’s a pesto tempeh recipe that you guys are gonna love!
Afterwards, my dad and I watched the Masters (he’s a die hard golfer and I wanted to spend time with him and the dogs).
Caught up on some blog posts I needed to write, with a little help from my friend 😉
Had some Wild Friends PB while I blogged, but I forgot to snap a photo!
Dessert was this Arctic Zero flavor I saw on sale at Whole Foods- it’s sooooo good!! I was sent a bunch of pints, and I love having one a week on a night where I don’t have to wake up early the next day, thus allowing myself to truly enjoy the flavor 🙂
I think I satisfied all my coffee needs that day 😉
After an overwhelming day with the publishing of that blog post, it felt so good to relax. Again, thank you for all your support- it means more than you will ever know 🙂
