Happy hump day, foodies!
Today’s What I Ate Today is probably the strangest day of eats I’ve ever had. Let’s dig in!
Recipe testing began early today, so breakfast was two (one unpictured) banana bread muffin with almond butter on top. The muffins had a walnut crumble- SO GOOD. You guys are gonna love it!
Oh, and I Had a Califia Farms Nitro Brew, which is THE BOMB.COM.
And then I didn’t eat until 12:45. Whoops. I had senior portrait reviewing, and by the time that was done, I was STARVING. When I came home, I wolfed down a yogurt bowl with a peach, granola, and some of one of the new Perfect Bar flavors! SO GOOD Y’ALL.
Around 2:00, I had this recipe that will be coming soon 😉 It was a black bean cheddar and egg quesadilla on a whole wheat tortilla with avocado stuffed in there as well. No WORDS- SO GOOD. Here’s a sneak peak:
After working on the blog a bit more, I had a pre-tennis snack of a Super Pop Foods Almond Butter bar. I love the crunch factor in these, and it was the perfect fuel for the lesson.
And I came back from tennis a hungry beast, so I whipped up this big buddha bowl. It feature a homemade chickpea patty, 1/2 an avocado, rice, sauerkraut (newest obsession), roasted broccoli and zucchini, hemp hearts, and garlic. ALWAYS GARLIC. Garlic is the reason I’m single, y’all.
And because it was hot, I had a watermelon popsicle an hour later while I watched Prison Break. I’m on season four and incredibly sad that it’s almost over, but I can’t wait for the revival in January!
After that, I had some peanut butter cups and cereal per usual. Sorry this post wasn’t super wordy- I’m leaving for a hiking trip tomorrow and have a million things to do before then. See y’all next week!
