// Happy first day of spring! As promised, I’m doing another “What I Ate Today”, but with a twist- I tried eating fully vegan for a day. As you may be able to tell, I’m not fully vegan, but I do support the lifestyle and have been interested in it for a few months. When I watched the film, Earthlings (I did a review on it) I decided to try eating more of a vegan lifestyle. However, I’m an extremely picky eater, and a lot of foods I don’t like (I.e nuts) I would need to balance out my proteins and fats with a vegan lifestyle.
I never get cravings for things such as meat, dairy, eggs, etc, so going vegan would not be the biggest challenge for me. That’s why today was so easy for me. I think that from now on, I’m going to eat vegan once a week. I didn’t notice a lack of energy- in fact, I felt more energized than I usually do! Without further ado- let’s get into what I consumed because I know that’s what you’re here for.
Just some oatmeal- ya know, the usual. I always have a busy morning before school, with little time to make breakfast- therefore, oatmeal is a time saver. Berries were on sale at sprouts this week, and I hadn’t had fresh raspberries in MONTHS. I was desperate. I forgot how amazing fresh berries are in oatmeal- how many days until summer?
Ps- this is what my breakfast looks like after I take photo. Lots more cinnamon, more fruit that couldn’t fit into the bowl, and oh yeah, more cinnamon.
Packed these beauties for lunch. My friends know I pack basically the same thing for lunch because I’m obsessed. I’ve recently been obsessed with a chickpea + quinoa combo, so I packed a salad with a base of spinach and topped it with chickpeas, sundered tomatoes, fresh tomatoes, quinoa, salsa, and the secret ingredient… jalapeño 😉 I mean- look at how beautiful that is.
My mom has packed me a bowl of fruit to go with my lunch for years, and it’s extremely convenient because without it, I’d be to lazy the. They usually consist of pineapple, grapes, and whatever fresh berries are available at the market! This one had raspberries, strawberries, blackberries, grapes, and pineapple.
Came home from school and was craving some carbs. I’m a huge believer in cereal as a snack, and I love finding new ones at Trader Joes to tryout. I’ve heard about puffed karmut but never tried it. Finally found it at sprouts, and I must say… it’s my few favorite cereal. I’ve only been eating it for two weeks, and I’ve bought three bags. No shame.
Okay, maybe a little shame. But it’s just so tasty, and packs a lot of punch!
I usually add some cinnamon with it, but I added that after the photo.
Am I the only person who hates having cereal with milk? I’ve always eaten cereal without milk since the day I was born. I just like it more as a cracker/chip??? No idea.
Look at that bowl of goodness + one of my dogs, Luke! For school night dinners I usually just pile a bunch of stuff in a bowl, add either some nutritional yeast or a dressing, and boom… call it dinner. Recently I’ve been OBSESSED with roasting veggies, so for this night, I roasted some veggies + chickpeas (best thing ever oh my gosh- I have a recipe right here) and threw it over some zoodles + my homemade pasta sauce (recipe coming soon). Added a dash (okay, a little more than a dash) of nutritional yeast, and called that a meal. This was so incredibly tasty- even my dog wants some 😉
Studying + A green juice = my night. Sounds super fun right?!
Also had my daily combo of two rice cakes + a chopped up apple. Don’t know why I always have this, but it never gets old!
