It’s almost Christmas… what??
I’m sorry, this is unacceptable. It doesn’t seem like Christmas by any means. I guess that’s what happens when you get older 🙁 Anyways, onto the eats!
For breakfast I whipped up some apple almond butter & jelly oats (recipe coming soon!) and added some granola as well. This breakfast hit the spot FOR SURE. I love adding apple to my oats, and I’ve found that it keeps me more satisfied than normal from the extra fiber.
I went and helped sort through clothing for a local thrift shop, so I packed a snack to eat in the car on the way there. I had a Siggi’s pomegranate and passionfruit yogurt with a few handfuls of grapes, which are my favorite thing to snack on throughout the day (#constantlyhungry) 😉
Since my mom and I volunteered together, we went to Costco afterwards. I was STARVING and knew it would be a while before I got to eat an actual meal, so I stole one of my moms Kashi trail mix bars, which I’m a fan of despite the large amount of added sugar.
Stole a sample in Costco because who goes to Costco and DOESN’T have samples?!?!?
Came home RAVENOUS and whipped up a quick bowl for a very late lunch- spinach, steamed veggies, roasted kale and carrots, chickpeas, and avocado. Nothing beats my recent obsession with steamed broccoli- it’s kind of scary how much I love it.
I babysat my sister for the rest of the night, so I ended up sticking a lot of things in the oven and letting dinner make itself 😉 My recent obsession has been this chickpea hash (recipe coming soon) with a side of roasted veggies and sweet potatoes. Gah, ugly never looked so good.
Had my usual cereal bowl that I naturally forgot to photograph (whoops). What are your go-to night time snacks?
