Well… I’ve returned to school. I’m back to the reality of early morning breakfasts, not having time to enjoy breakfast, and stressing over tests like there’s no tomorrow. For now, let’s eat!
If you couldn’t tell, oatmeal and I are in a serious relationship. Today I added grated apple into the mixture, as well as chia seeds and egg whites- per usaul. Topped it with more apple, fresh fruit, hemp hearts, Wild Friends Chocolate Coconut Peanut Butter, Purely Elizabeth granola, and a but load of cinnamon afterwards (duh).
I packed some different for lunch today! Look ma, look! I got a new MICROWAVE (clearly way too excited) Tupperware at Marshall’s and put it to use today. I steamed some brussel sprouts, re-heated the quinoa, diced up the tomato, added the arugula post-steaming, and called it a salad.
Also had an apple with cranberries and some carrots with pictured hummus through out the day.
Throughout the day, I snacked on about three of these peanut butter cookies that I made over the weekend (y’all are gonna love the recipe!)
When I came home from school, I was a HANGRY beast (as always), and you don’t wanna miss with me when I’m hangry… avocado toast cures all 😉
I’ve been on a serious roasted veggie kick recently, especially when there’s brussel sprouts involved 😉 Roasted some carrots, brussel sprouts, bell pepper, and broccoli in coconut oil, and paired them with shrimp & onions caramelized with balsamic vinegar. Oh yeah and my favorite thing since oatmeal… RUSSET POTATOES- aka the most underrated potato there ever was. Everything was over some spinach and kale and topped with hot sauce post photo 😉
My usaul combo… puffed kamut, One Degree Organic’s cereal (today’s choice- brain flakes… I LOVE EM DON’T JUDGE), frozen blueberries, and milk post photo. Yeah, I have a sweet tooth for carbs 😉
