I have some explaining to do…
Basically, my computer (Macbook Pro) is five years old, and “has a lot of issues” is an understatement. I’m waiting to upgrade it until I go to college, so I still have a year and a 1/2 with it. I’m very grateful it still works, but it’s on its last legs. Last week, the RAM shut down, and because of that, I’m currently writing this post from my old computer (very grateful that it still functions!!). I couldn’t get this post out yesterday because I was still figuring out how I was going to get the photos onto it, but the problem’s solved! With that being said, let’s get on with the eats.
I’m currently on winter break, so I’m “sleeping in” (aka until 7:30). I follow the same routine of working out as soon as I wake up to get it over with. I will say, however, that I have developed a love for strength training! After breakfast I enjoy “coffee time” and then get onto breakfast.
Went with the classic oats cooked in Salbachia ground seeds, but with the addition of Wild Friends Chocolate Coconut PB, unsweetened coconut flakes, BodyOm pumpkin seeds, and a butt load of cinnamon post photo (#duh)
I’m not much of a snacker (I like bigger meals), so I didn’t have my next “meal” for about four hours. In-between that, I cleaned like a crazy person, caught up on business emails, planned some exxxcciiitttinnggg blog things, and listened to three podcasts in the process 😉
Once productive time was over, I immediately put on my sweats, made lunch, and watched a movie. After seeing my dear friend Bailee’s WIAT, I knew I wanted bassicccalllyyy the same lunch. Went with the classic of an over easy egg fried in coconut oil topped on avocado toast (DUH x3000).
Also used up some left over chickpea crumbles (sooooo good!! Recipe coming soon ;)) by throwing it over a bed of kale, steamed broccoli (newest obsession- I snack on it daily) and some salsa.
In case you’re wondering, I am a DIE HARD HARRY POTTER FAN, so I watched Harry Potter and the Deathly Hallows Pt. One 😉
Around 5:00, I got a tiny bit hungry, so I snacked on a honey crisp apple sprinkled with cinnamon and a MASSIVE carrot. Also, the coloring book obsession is real, and I don’t care if I sound like someone who’s trying to be trendy. They.are.addictive.
Around 7:00, I whipped up another bowl o’stuff, but this time, I added a baked sweet potato (K HOW AM I NOW JUST ON THIS HYPE TRAIN WHAT THEY’RE SOOOO GOOD) with a dollop of greek yogurt, a sprinkle of cinnamon, and some maple syrup. Also had the last of the crumbles and basically my body weight in roasted brussel sprouts, carrots, and bell peppers- all tossed in coconut oil, balsamic vinegar, and garlic powder. Over a bed of kale, naturally!
In case you were wondering, I was onto my second drawing in the book (*pats self on the back*)
Anddddd finally, around 9:30, I whipped up some “fluff”. What is “fluff”? It’s essentially a ton of ice, almond milk, peanut butter, cinnamon, and a scoop of protein powder all blended together. I let it freeze for about an hour and then enjoy! It sounds very very strange- I know- but it’s so tasty and a good way to curb my sweet tooth.
