These whole wheat chocolate chip waffles are protein packed, refined sugar free, and incredibly delicious! They’re filled with sweetness and make for the perfect weekend brunch.
Hi friends! Taking a cookie break today, because after these apple cinnamon breakfast cookies and these VEGAN PEANUT BUTTER STUFFED CHOCOLATE CHIP COOKIES (yeah, HI), my body wanted something different. By “different”, I mean WAFFLES, cause waffles never get old? Ya feel?
Let me tell ya about my grandfather. I guarantee I’ve mentioned the waffles he used to make us whenever we visited my grandparents home in Tucson, Arizona, so I won’t repeat that story. No, I wanna talk about the fact that HE HAS A FREAKING MASTERS IN CONCEPTUAL PHYSICS. Hi, what. Him and my mom (is daughter) are GENIUSES when it comes to math and science, and here I am, struggling to grasps the concepts of basic biology.
In all the years I’ve been alive, he’s never ONCE mentioned his masters. That goes to show you how humble he is. He always helped me with my science homework, and if I had known just how smart he was, I would’ve just had him teach me the class. He’s the kindest and humblest man, and he’s also a big chocolate lover. So, today’s waffles are dedicated to the biggest teddy bear, waffle lover, and chocolate consumer I know!
Waffles > pancakes, especially when chocolate chips are involved. There are holes for a reason, people! You may be wondering how I obtained the chocolate flavor without cocoa powder, which I have a very strong love/hate relationship with it. I mean- it gets you the chocolate flavor, but on the other hand, it’s so bitter that it requires so much sweetener, and is a MESS. I digress. ANYWAYS, I used Vital Proteins Collagen Whey Cocca & Coconut Water, which adds a ton of chocolate goodness without the bitterness! Hey, that rhymed 😉
ANYWAYS, I love Vital Proteins, especially their whey. Their whey is the only whey that doesn’t upset my stomach, and it’s also packed with collagen and nutrients. Adding it to these waffles gives them the chocolate flavor, as well as an added protein boost, which makes them filling and the perfect post workout fuel. Really tho, these are good any time of day, for any meal.

- 1 cup whole wheat flour
- ⅓ cup almond flour
- 2 scoops Vital Protein Cocca & Coconut Water Whey (or, 2 scoops chocolate protein choice)
- ⅓ cup coconut oil, melted and cooled
- 1 ripe banana, mashed
- 3 tbsp maple syrup
- ½-3/4 cup almond milk (the more milk, the thinner the batter)
- 2 tsp baking powder
- ½ tsp sea salt
- Chocolate chips, for topping
- Heat your waffle iron.
- Mix together the flours, protein powder, sea salt, and baking powder. Once mixed, add in the oil and banana. As you mix those, add in the almond milk, until the waffle batter has reached your desired consistency.
- Once the iron is heated, pour ~1/4 cup batter onto there and spread out evenly. Cook for 2-3 minutes, until fluffy and crispy.
- Transfer to a plate and repeat until the batter is gone. Top with chocolate chips and enjoy!
