Happy Veterans Day! I hope that all the veterans out there know how appreciated they are not just today, but everyday. I know that for me, my grandfather was a naval officer, and I constantly tell him how grateful I am for his services.
Went all out on my smoothie bowl this day, but considering how good it looks, I have zero shame. I made a vanilla mango banana smoothie (recipe coming soon!) using Vega protein and cashew milk. I topped it with coconut, BodyOm pumpkin seeds, Purely Elizabeth blueberry hemp granola, hemp hearts, goji berries, and fresh fruit. Possibly the best smoothie combo EVER! (I say that a lot, don’t I?)
I’ve been all about veggie sandwiches recently, so naturally I had to pack one for my lunch. I used spelt bread for the base and added hummus, avocado, mustard, tomato, and spinach. It’s a winner in my book for sure!
Also had a plain Siggi’s on the side for some added protein and yum 😉
Afternoon Snack #1
Around last period, I usually am getting pretty hungry. When the hunger strikes, I always have veggies and hummus packed. Don’t worry, I had extra hummus in a container 😉
Afternoon Snack #2
Came home HANGRY and thus whipped up a quick yogurt bowl. I tried the combo of pomegranate seeds, chopped pistachios, and Purely Elizabeth and boy was it good. Highly highly recommend.
Dinner was one of those “eat a bowl bigger than your head” kinda nights. I found a GIANT bowl in our house and decided to throw a veggies, lettuce (almost a full bag), tempeh, lentils, avocado, goat cheese, pomegranate seeds, and more into the bowl. Now that it gets dark early, I can’t ‘gram my meals cause of the light, so I’ve been slacking on creative meals if we’re being honest.
My daily classic- puffed kamut, frozen berries, and a crumbled Ginny Bakes cookie. Doesn’t get much better than this!
