With a crazy week last week, I was unable to upload one of these, and I was so sad about it. I’m sorry for my absence, but I’m back! Lets get on into the meals.
Recipe testing my single serving coconut oatmeal recipe for you guys. Recipe will be up on Saturday along with my Saturday Obsessions post! These are so delicious and extremely filling. Also had a peach and some strawberries on the side for some fruit (and to be honest… maybe for the photo as well…)

It was Sunday and while I am normally good at getting homework done on Saturday or early Sunday, I kind of procrastinated my English reading that day… I was picking out outfits for Coachella (!!!!!!!!!!!!!) so I guess I had a good reason right? Right. Any who, that day I had some left over pasta (the brand is Thin Slim Foods) with some crushed tomatoes as a sauce. I also had some left over breaded chicken that I made the night before (sensing a theme here? Here’s a hint- lazy) and some baked broccoli! Super filling and delicious.
If anyones wondering, the book I’m reading for english is called Night by Ellie Wiesel, and I can honestly say it is one of the best books I’ve ever read. It’s extremely sad but it’s so interesting and riveting.
Biiiiggggg bowl of puffed karmut- aka my newest obsession. It’s such a good snack when I’m not super hungry but still want food in my stomach! Also- yes I did eat it dry, I hate soggy cereal.
I found out my mom was going to the store that day, and I immediately texted her asking for one thing: tempeh. I had never tried it, but I’ve been seeing it everywhere! I picked some up and added it to this power bowl along with some quinoa, chickpeas, sautéed veggies (brussel sprouts, onions, bell pepper, and zucchini), and some cherry tomatoes all over a bed of spinach. Verdict of the tempeh- it’s amazing! Didn’t taste boring at all (I added some liquid aminos) and packed a ton of protein. I will defiantly be buying it again.
The post dinner hunger was calling my name, and I had to answer. Chopped up about two apples and paired it with two un pictured rice cakes for a filling and simple night snack.
Again- I’m so sorry I didn’t post last week! I had a crazy week with school, and couldn’t find the time or memory space in my brain to take photos. I’m going to Coachella with one of my best friends this weekend so I’ll probably do a WIAT- Coachella edition! Also, finals are coming up for me, along with a trip to Paris, so you may be seeing more of these as eating out editions or less of these and more lifestyle post. Just giving you a heads up that my life will be crazy for the next two months, but this blog is still one of my top five priorities! Until next time,
