Hello- I have returned! My computer broke these past two weeks, so thus, no blog post! I was so sad about it, but I’m back, and have so many recipes + post up my sleeves! Stayed tuned 😉 Now, for the real reason you’re here- let’s get on into the eating.
Zoats. Had some left over zucchini, so I grated it and added it into my oatmeal while cooking. Recently on the weekends I’ve become obsessed with making stove-top oatmeal instead of microwave since I have time. I don’t know why- I feel like I’m pampering myself.
Now this is what my breakfast looks like after I take a nice photo. Add a lot more fruit? Check. More cinnamon? Check.
Simple and sweet. Shrimp, roasted veggies + sweet potato. Love having time on the weekends for meals. I’m planning on doing more go-to type meals/snacks like my go to bars post I recently did, so keep your eye out for that! I added tons of hot sauce on after the photo because I kind of can’t live with out it… whoops.
PANCAKES. Not just any pancakes. The best vegan pancakes… EVER. Usual recipe I use, but I added some canned pumpkin cause I was going through a pumpkin thing… I really don’t know. Semi (okay- completely) obsessed with these pancakes, and I make these way to often without any shame.
Snacks (These aren’t the specific snacks I ate that day but they are my favorite go to snacks recently)-
These KIND bars. I did a whole section on them in my recent snack bars post, so I won’t go to in depth with them. Wow- they’re amazing. I can’t find them in stores though, so if you know where to find them, you can… ya know… help me out. I’m begging you. Pleaseeeee.
Quest Bar + Fruit Bowl. I ate this while watching the recent episode of Scandal, so that was the perfect combo (triple threat). I’m completely obsessed with Scandal, so I was very content with that afternoon (PS- The WCR quest bar is really good! Still can’t decide which one is my favorite though…)
Yup. I eat these as a snack. They’re actually filling for a veggie, and they held me over until dinner. Pictured is some brussel sprouts + sweet potato + bell pepper. No seasonings cause natures seasoning is the best sometimes!
I had an un pictured apple + rice cakes to end the night because I eat those everyday but I forgot to take a photo. I’m sorry! And this post is very rushed, but I wanted to get this up for you! I’m thinking of not making these specifically Wednesday post and doing these one day a week. I don’t wan them to be rushed- like this- and I want to make them interesting. So until whenever (I may be doing another one of these this week to make up for missing last week 😉 ), keep on smiling.
