Another day, another documented day of eating. Let’s begin!
A big hot bowl of oatmeal. The most underrated combo for oatmeal is hot oatmeal + greek yogurt- if you haven’t tried it yet, you’re missing out. Paired it with a banana (3/4 mashed in, 1/4 sliced up) + blackberries + strawberries- berries were on sale at Sprouts again!!- and of course, the greek yogurt. My favorite is the non fat from Trader Joes- I’ve always adored sour foods, so the tartness of the yogurt is perfect.
As previously stated, I keep my lunches simple. I’m working on a post for my favorite school lunches right now, so keep an eye out for that! For this week of school I prepped some turkey burgers + couscous & put that over a bed of spinach with tomatoes + sundried tomatoes + bell pepper. So tasty!
And again, my mom makes me fruit bowls. This one emphizied the fact that spring is in full effect- orange slices, blackberries, strawberries, green grapes (my favorite), and pineapple. Cures my sweet tooth instantly.
The Costco brand salmon burgers are my obsession- paired perfectly with roasted veggies and I have dinner in 30 minutes top. For the veggies I cut them up, tossed them with non stick spray, and stuck it in the oven at 400 for 25 minutes. Sticking with the Costco theme, I dipped my veggies in some Costco medium salsa- I love finding new salsas and I am never disappointed with them!
Got hungry during school, so I brought a KIND square bar (Dark Chocolate Chunk) and some vitamin water. Hit the spot. I know vitamin waters aren’t the healthiest thing, but my school sells them for pretty cheap, and I forgot my water bottle that day (it was awful), so I was extremely thirsty.

Creative writing assignments call for a good snack (well… I can always find an excuse for a snack). Mango chunks- SPECIFICALLY FROM TRADER JOES + green grapes are a great combo. The Trader Joes mango chunks are the best kind- hands down.
And to end the night I had my nightly combo of a chopped green apple + two rice cakes- didn’t take a photo- sorry! See you guys soon with another day of eating n’ such.
