Happy April Fools Day? Is that a thing to say? Eh… let’s move on. I decided to take these photos on a day in which I was traveling and therefore, extremely busy. But you’ll see it is very easy to eat healthy on the go!
We’re staying at a friends house up here on our family vacation (we go skiing once a year) so I’m limited on food. We grabbed a big batch of oatmeal at the local market, so I paired that with a banana + some strawberries. Simple and delicious. The carbs were the perfect fuel before I skied some black diamonds for six hours.
Stopped at a grill on the slopes for a break and payed wayyyy to much for this salad. Added some of the balsamic vinaigrette on the side, but this was the healthiest thing they offered. Kind of disappointed in that, considering all the people they have to serve. Also got an orange (again… carbs.) It was super sweet and HUGGEEEE (I’m not complaining 😉 )
Also packed a bagel from Western Bagel (doing a review on very soon) to snack on during the day. The carbs are perfect for the altitude I’m ate, and these are amazing bagels, so I’m not complaining.
Weird snack- I know. But we’re limited on food and I wanted something light before dinner. Roasted carrots + bell pepper + tomatoes + a toasted coconut greek yogurt (delicious flavor). Hit the spot after a long day of skiing.
We went to a local restaurant for dinner, and I got this bad boy. Ahi Tuna Salad with a homemade mango salsa (I’ve never tried mango salsa before, but after this one, I already have it on my list for my next Trader Joes run) and a teriyaki vinaigrette! Also had some radishes and cherry tomatoes on a bed of greens. The salsa was so delicious and mouth watering + the tuna was cooked perfectly!
My usaul combo of two rice cakes + a green apple. Need I say more? PS- this rice cake flavor is AMAZING. Favorite flavor hands down. I have no words.
