Happy late mothers day everyone! Did one of these “What I Ate Today” ‘s on mothers day, so I thought I’d wish all the mothers that, even if it is late. Hope you all had an amazing day! Now… lets get on to the eaaaatttttssss.
Breakfast- I was planning on making my mother brunch that day, so I ate a light breakfast. Enjoyed a Western Bagels cinnamon spice bagel with some powdered PB I found in my pantry. Definatly a fan of normal nut butters, but this was nice for a light breakfast!
Also enjoyed a cup of Sweet & Spice tea by Good Earth in a mug the size of my face (I wish I was lying).
Brunch- Made us some two egg omelets with kale, feta, and avocado after a nice tennis match! My mom is actually the one who got me into tennis, and I’m forever greatful because of it. Also had some ezekiel bread on the side. This was such a yummy meal! We enjoyed some Grey’s Anatomy while we ate, incase you were wondering 😉
Snack #1- Made a suuuppppperrrrr ugly mug cake, but it is so so yummy. Some of the ingredients are mashed banana, coconut flour, egg whites, apple sauce, and some other goodies. Added a huge pool of almond butter on top!
Dinner- Tried out a new chicken recipe and it turned out aammmaaazzzinnngg!! paired it with some russet potatoes and some asparagus. So yummy!
My mom and I watched two more episodes of Grey’s Anatomy (season 11 is so so so good!!) so I guess I got a bit of a present as well 😉
Wasn’t in a very snacky mood that day as you could tell, but I hope you enjoyed! These next three weeks will be extremely busy for me, but I’ll try to keep these consistent! Until next time, stay smiling 🙂
