If you guys didn’t know, the reasoning for my absence these past few weeks was due to my computer running out of storage (#foodbloggerprobs), and I had to get the hard drive replaced. But that’s all in the past, as I am back now (with a faster hard drive thankfully). Something I missed the most was doing these WIAT’s, so I am very happy to be doing one of these. Let’s get onto the eatttsssss!
Breakfast- Had a conditioning/footwork clinic that morning for tennis (hardest two hours of my life). Fueled up with carbs, of course. This is just two slices of Food For Life ezekial bread topped with Wild Friends Honey PB (aka crack) and a drizzle of maple syrup on top! Also had a fresh peach on the side because it’s summer and it’s peach season.
Snack- After tennis, I grabbed a Kashi Trail Mix bar before some errands. I love these Kashi bars for a good mid day pick me up!
Lunch- Created the most amazing salad evvvvvaaaa. Simple baked some chicken, roasted some brussel sprouts that were pre-coated with balsamic vinegar, cooked up some tri colored quinoa, and put it on a plate that with kale, tomatoes, avocado, and feta cheese. Food heaven. Never craved a salad more in my entire life.
Also had a few of these chips on the side. I’m not a huge chip person, but I’m obsessed with these!
Dinner- I was craving Chipolte, but since I don’t get my license for a month and my parents were gone, I had to get creative. Whipped up this bad boy as my replacement. Simple some left over baked chicken with quinoa, sautéed veggies, avocado, feta cheese, diced tomatoes, black beans, and some greek yogurt. In my opinion, this was 10x better than Chipolte, and my wallet was thanking me.
Dessert- After dinner, I was craving some potatoes. Simple baked some sweet potato and dipped it in mustard. Pretty bomb was to end the night if I do say so myself.
