Summer’s almost over and that means that my morning pancakes and scrambles will be replaced with overnight oats and greek yogurt parfaits… not that I’m complaining (kinda am because I’ll be a junior this year but that’s another story) 😉 That being said, let’s make these WIAT’s interesting as we approach August!
My morning always starts out the same- wake up, workout, eat. I am someone who can not have food in their stomach when they’re doing cardio or weight lifting (as strange as that sounds)- it makes me extremely sick. People question the idea of fasted cardio and strength training, but honestly, I’ve never had a problem with it. Post workout breakfast is always what I’m dreaming about when I’m doing cardio or pushing through a final set of squats (not joking). Today’s was absolutely perfect- a hot bowl (yes I said hot, and yes it’s still summer here in California) of egg white oats topped with alllllllll the goods. Today’s include Purely Elizabeth granola, cinnamon raisin PB, fresh cherries and blueberries, and of course, a ripe peach!
This day started off with a looonnggg SAT prep session, so naturally, when it came time for tennis- I was starving. These KIND bars are my current favorite!
As for lunch, I had just finished a spur of the moment babysitting gig, and once again, was extremely hungry. Don’t know what was wrong with my cravings, but I am glad I listened. I sautéed some asparagus and bell pepper on a stove, and added a fried egg + pan seared salmon burger on the side. Also added my new favorite- homemade mango salsa (bless mango season). In that bowl is some recipe testing goodies- dark chocolate coconut almond granola (recipe coming very very soon 😉 )
Dinner was extremely simple, but that’s how I like it sometimes. Baked some chicken in the oven with seasonings and added a side of sautéed veggies and russet potato wedges to the side. Again, more mango salsa was added.
And to finish off the night, I tested out some of these coconut granola bars! Verdict- a success, and a recipe will becoming to a computer screen soon 😉
