Last blog post as a 15 year old… WHAT?!?!?!?!??!?! The birthday festivities have been in full effect with my friends and I these past few days, but I have still managed to eat well. Yes, I have indulged, but I have also maintained my healthy lifestyle. Balance, people! With that being said, lets get on into the eaaatttssssss (I’m clearly excited about all the eats)
Had to wake up extremely early to workout before my SAT prep at 8:30 (I know, I’m cringing as well). Therefore, toast was a great option. Two slices of ezekiel bread- one with cinnamon raisin peanut butter, peach, and granola, and another with greek yogurt, blueberries, and more granola (perfect amount of crunch!)

I know, I know- this looks disgusting. It’s not, I swear. It’s absolutely amazing, and “it” is the Purely Elizabeth Mango Almond Muesli, and it is too die for. This was the last of my box, and I’m so sad I can’t find it in stores, because I’m going through withdrawals already. There’s tons of pumpkin seeds and dried mango in it, which is always a win! Cooked it in the microwave with some almond milk, and added some leftover PB2, a drizzle of maple syrup, and a toonnn of cinnamon.

The “bowl of stuff” theme continues not just with dinner, but with lunch! I kept it simple but grilling some shrimp and throwing it over a bowl of edamame pasta (24 grams of protein per serving!) and kale. Added some tri-colored beans, sundried tomatoes, feta cheese, and a dash of nutritional yeast. Extremely filling and super colorful! And look at this little plant my friend gave me as an early birthday present… so so so cute!!
Made the most amazing chicken dish I’ve ever mad for dinner. It was a breaded curry chicken over a bed of barley. HOLY. My taste buds were in heaven. I also had a side salad of kale, brussel sprouts, sundried tomatoes, feta, and avocado. Hello yum.
