As summer dwindles down, I narrowing in on my favorite quick foods, as I know that I will be short on time. Here is another installment of WIAT!
Pre-tennis breakfast: I think I’ve discovered that toast combos will be a go to for me this up coming school year. Today I had two pieces of Ezekiel Bread– one topped with mashed avocado and tomatoes; one with greek yogurt, granola, and cinnamon. Also had some fresh strawberries on the side. So yummy.
And because my stomach seemed like an endless pit that day, I had another piece of avocado toast afterwards because… hungry.
Snack: After my lesson, I went straight to high school tennis ( #tennisaddict), so I had a Siggi’s yogurt in the car. Their yogurt flavors never disappoint.
Lunch: Brought my friend and I Chipotle while we lounged by the pool (I’m such a great friend) on a 96 F day. My bowl consisted of lettuce, sofritas, all the salsas and black beans. Chipotle is my go to for on the run meals.
Afternoon Snack: Came home from my friends house with a massive craving for bananas (weird right), so I grabbed a banana from my kitchen.
Dinner: Tried out a new recipe and it turned out amazing! It’s feta breaded chicken with some veggies and alllllll the potatoes on the side. Fun fact- potatoes are one of my top five favorite foods. Can’t go a day without ’em.
