Oh hey August…didn’t see ya there. I promise I’m working on a TON of recipe’s for you, but between yearbook, sleep away camp, and tennis, I am a busy gal. That being said- I have exciting stuff coming up- do not worry! But for now, I’ll show you the boring eats 😉
Breakfast: Yearbook camp was this week, and because of that, I had early morning workouts. With early mornings comes laziness, and with laziness comes greek yogurt over night oats. I added some homemade coconut granola (recipe coming soon!), diced peach, berries, and of course- almond butter (aka crack).
Mid-morning snack: It’s cherry season, so I packed up a bunch for a morning snack. SOOO juicy!!
Lunch: We’re back to the days of packed lunches; todays included: tempeh, bell pepper, carrots, israeli couscous, and avocado over a bed of the kale and brussel mixture from Trader Joe’s! (My favorite lettuce mixture ever).
Afternoon snack: Technically these were “all day snacks”- I snacked on baby carrots while working through out the day, as well as this juice. The juice was nasty, however, so I do not recommend it!
Pre-tennis snack: Enjoyed a KIND bar after a long day of camp. I loved this flavor since it was so different than the other ones. 10/10!
Dinner: Lately I’ve been enjoying my hodgepodge plates instead of bowls. I was extremely tired after tennis, so I roasted the veggies in the oven and sautéed the shrimp on a pan with some lemon juice. I added more Israeli couscous, sundried tomatoes, and mashed “cheesy avocado” as well! (The avocado is nutritional yeast + mashed avocado + lemon juice). For the veggies, I chopped them up, put them in a bowl, added about a tsp dijon mustard, a drizzle of balsamic vinegar, some seasonings, and mixed them together. I roasted them at 400 F for 20 minutes. I’ll do a more in-depth recipe coming soon though!
