As you’re reading this, I am sitting in my first day of classes as a junior. Please send out a moment of silence for my sanity as I embark on junior year. Let’s begin with the eats though, as that’s what you’re here for!
As the SAT and school nears closer, I’ve become accustomed to “things on toast” as my breakfast. Today was no exception. I’m loving Peanut Butter and Co’s cinnamon raisin peanut butter, so I added that to two slices of Ezekiel Bread with cinnamon. Too classic not to photograph.
Ate it while I watched SportsCenter of course 😉
I had some leftover Siggi’s vanilla yogurt, so I baked up a peach and topped it with the yogurt, Purely Elizabeth granola, creamy almond butter (duh) and cinnamon (double duh). It was like a deconstructed peach cobbler- so tasty!
With school tennis starting up, I have practice in the afternoon, so a big lunch is always important. Today’s included left over salmon, a fried egg, barley, and some avocado. Ten minute meal.
On my way to tennis I always have a snack, so today was no exception. One of my favorite people, Maddie (Thedancingfoodie27) and I did a food swap, and she sent me this bar! It was so tasty and I loved the nutty taste in it.
Made a batch of my paleo pancakes but added pumpkin into it because it’s never too early for something pumpkin, right? I topped it with some white chocolate PB, coconut chips, dark chocolate (all of which Maddie sent me <3), Purely Elizabeth granola, and strawberries.
