Currently writing this at 5:30 before a do some final review for my APUSH test… lets have a moment of silence for that. Okay, now let’s eat.
Spent the day at home studying and watching football, so I went with a classic breakfast. Egg white oats topped with sliced banana, frozen blueberries, pumpkin seeds, San Granola granola, and some greek yogurt post photo!
Got hungry after a quick tennis session (#alwayshungry), so naturally I grabbed a piece of bread (too hot to toast / lazy), spread some avocado on it, and added red pepper flakes. Such a classic.
Fun fact- I eat toast with a fork because if I didn’t, it would be gone in two seconds.
Stuck my head above my notecards for a quick lunch break consisting of butternut squash, roasted brussel sprouts (fav), quinoa, mashed avocado, and hot sauce (post photo) over a bed of spinach. Ate it while studying, naturally!
One good thing about fall (I’m a winter girl at heart) is all the squash. Expect many more squash recipes in the very very very near future!
Tested out some homemade peanut butter banana bread (result- it’s a winner) with some greek yogurt and a drizzle of maple syrup for a quick afternoon snack while, shocking, STUDYING. Y’all are gonna love it 😉 (the bread, not the studying)
More recipe testing for dinner via sweet potato nachos (recipe went up this week!). Ugh I think I found my new favorite dinner 😉 Seriously- these took twenty minutes and gave me plenty of time for football (after hours of studying). Yahooooo!
One more slice of banana bread post dinner pre night snack because #alwayshungry. Forgot to photograph it of course, because I haven’t been doing this for months?
Ended the night like I always do- big bowl of puffed kamut, EatPastry vegan cookie dough, some frozen berries, and cinnamon.
Not the wordiest post, but there was’t much I did today. See ya soon foodies!
