My school recently changed up our schedule, which means 10:45 lunches (cue the annoyed sigh and RBF face). It is very annoying in my opinion, because I am not hungry by then. Therefore, I have transitioned to eating a lot of snacks through out the day, which is something I don’t prefer, but it is what it is. Let’s begin with a typical day of school eats…
I’ve developed a habit of waking up early to sit down, make a nice breakfast, and enjoy it. With the stresses of school, I try to find little things tat make me happy, and this is one of those things. For breakfast this day I had some oats cooked in cashew milk (soooo much creamer!!) with some banana mashed in and topped with diced peach, frozen raspberries, banana slices, Siggi’s Vanilla 4%, Purely Elizabeth granola, and almond butter added afterwards.
During class, here are the snacks I’ve eaten (I don’t remember which class I ate each of them in… sorry!)
A bowl of cotton candy grapes (!!) and diced peach for a sweet tooth pick me up.
Going along with the fruit, I diced up an apple; Granny Smith is my favorite!
Carrots and some unpictured roasted garlic hummus from Trader Joes (my favorite kind).
Got my hands on the new Siggi’s Peach yogurt! I love peaches as you can tell, and it is very authentic in its taste.
With lunch at 10:45, I packed some avocado toast for a lunch snack. This is easy to pack for school, and I’ll be doing another school lunch idea post coming soon, but this will be in it for sure!
Pre-tennis practice snack was a KIND granola square in the Maple Pumpkin Seed flavor, which is my favorite.
Post tennis, pre homework was a gooodddd one- bed of arugula, avocado, spicy tempeh, corn, brussel sprouts sautéed in coconut oil, quinoa, and tomatoes. Think I’ve found my new go to tempeh recipe!
That’s all for today- what did you eat?
