I am t-minus three days away from spring break, and I can tell my body (and sleep cycle) slowly knows that. As I loose sleep over tests, papers, and more, I have to remind myself HOW close I am. Thus, meals are gonna be lazier today because ya know- school takes time man. Let’s begin!
For breakfast, I took inspiration from an Instagram I’d seen a few days before. So, here we have overnight oats made with Salbachia ground chia seeds, coconut milk, and plain greek yogurt. Then, I proceeded to top it with all the goods, including fresh fruit, Purely Elizabeth granola, pistachios, cacao nibs, and creamy almond butter!
I had to leave school around 10:30 for an appointment, so about 1/2 way through my looonnnggggg drive to the doctors, I pulled out a Cranberry Crunch Perfect Bar. I am OBSESSED with these bars; they add the perfect amount of protein, fats, and carbs to keep me going, but more of all- they’re freaking delicious. After my appointment, it was getting near lunch time, but since I was going home, I didn’t want to eat a full lunch. I grabbed a peach I had packed that day to eat at school, forgetting about my appointment at the time.
I also found a Starbucks gift card in my car, and since it was Friday, I decided to treat myself to my favorite drink- an unsweetened iced passion fruit tea. You gotta treat yourself, am I right?!
When I got home, my mom treated me to a fridge full of fresh groceries, but I still wanted a lazy meal 😉 I scrambled up some eggs and leftover tofu (recent OBSESSION), added some roasted cauliflower, avocado toast, and called it a day. My mom and I watched an episode of Scandal afterwards, which was much needed before I spent the afternoon writing essays 😉
Since I ate lunch pretty late, I wasn’t really hungry until dinner. I was hanging out with my friends that night, but not until way after dinner time. So, I made my classic meal, and Call me lazy (and you may- I accept it), but this may be my favorite meal. It’s sad I always revert to this considering the amount of saved blog posts from other bloggers I’m dying to try. Again- LAZY AND PROUD.
All this was was roasted veggies in coconut oil, baked sweet potato, some sort of protein (today’s choice- chicken), and avocado. It NEVER gets old!!
After I got home from hanging out with my friends, I wanted some ice cream because IT WAS FRIYAY. I’m still going through the pints Arctic Zero KINDLY sent me, and I’d say I have one once a week as a “treat yo self, you made it through the week” kind of night snack. Today’s pint- banana pudding, which I enjoyed a lot more than I thought I would!
Next weeks eats will be more interesting because… SPRINNGGG BREAKKKK. Also, I’m sorry about how some of the photos are rotated- wordpress is being annoying about that and I can’t seem to fix it 🙁 Anyways, see ya soon!
