Here’s my “zoats” story”- one day, we had little to no food in our house. I wanted oatmeal for breakfast, but I didn’t have any ripe bananas for it. Thus- zoats! I’ve seen these everywhere, but I was really worried I’d taste the zucchini in it (I love zucchini, but vegetables on oatmeal?). I was wrong!
You can’t even taste the zucchini, plus it adds a ton of volume to the meal!
1/2 cup oats
1 cup almond milk/liquid of choice
1/2 zucchini, shredded
Toppings of choice
Pour liquid into sauce pan, and cook on high heat until the liquid starts boiling. Once boiling, turn to a low heat and combine oatmeal. Continuously stir for 3-4 minutes, pausing in between. After that, add the shredded zucchini into pan and stir everything together! Once the oatmeal has absorbed everything, transfer to bowl and add toppings of choice. In the photo below, I added banana, cranberries, strawberries, blackberries, and some frozen blueberries!
