This zucchini noodle pad thai is refreshing, easy to make, and absolutely delicious. It’s filled with peanut flavor, crunch, and takes less than 15 minutes to make.
Summer’s almost here! Summer’s almost here! I mean, I took my only AP on Monday, so really, I’m basically done with senior year. Yeah, what??
In my opinion, summer is the season of no baking and salads. It’s the time to chill and take a much needed vacation. It’s time to hang out with your best friends and spend hours doing god knows what. It’s time to dedicate yourself to what you truly love.
In my case, summer is a time for me to blog, play tennis, and hang out with my friends. Since this is my last summer at home before I leave for college, I’m making the most of my time in San Diego. That means lots of tacos, beach days, and long nights spent at the fire pit. Or, maybe that means my inner grandma will take full advantage of the precious sleep time and go to bed at 9:00 PM. Who knows!
One thing I do know is I’ll be making lots of zucchini noodle dishes, or “zoodles”. Also, spell check just corrected that to “noodles” three different times, and I think that needs to stop, BECAUSE ZOODLES ARE A THING AND THEY NEED TO BE RECOGNIZED BY THE OXFORD DICTIONARY. Petition for that to become the world of 2017 please.
I’m freaking pumped about today’s dish, because it involves two of my favorite things: zoodles and pad thai! I’ve been on such a pad thai kick recently, yet the only pad thai dish I have on my blog is this dish from last summer. Wow, isn’t it amazing how much you can improve in a year? I plan on posting a lot more pad thai dishes on here, so I hope you’re ready. If you’re not ready, then get ready, because they’re coming. I already have two more pad thai dishes planned out for 2017, and I don’t plan on stopping.
This dish is a great summer side, or you can add some quinoa and tempeh for a more balanced, filling meal. If you need a spiralizer, this is the one I use and I love it! I love it because it’s light, vegan, less than 10 ingredients, and comes together in 10 minutes. 10 minutes people! If you make this, don’t forget to tag me on Instagram @tennishealthfitness.
- 1 zucchini, spiralized
- 1 large carrot, slivered
- 1 bell pepper, thinly sliced
- ½ red onion, chopped
- ¼ cup peanuts, chopped
- 3 tbsp sesame seeds
- ¼ cup peanut butter
- 1 tbsp hot sauce
- 3 tbsp soy sauce
- 3 tbsp water
- ½ tsp sea salt
- ¼ tsp paprika
- ¼ tsp garlic powder
- Serving (optional):
- Spiralized your zucchini.
- Thinly slice your bell pepper, onion, and carrots. Add to a bowl along with the peanuts and zucchini.
- Mix together the dressing ingredients and add in more water if necessary. Pour over the vegetables and sprinkle with the sesame seeds.
- Divide and serve with anything you'd like. Enjoy!
